Whole Baked Cauliflower with Cheese & Truffles

Ingredients
  

Roasted Cauliflower

  • 1 whole cauliflower
  • 3 tbsp extra virgin olive oil
  • salt & pepper to taste

Cheese Sauce

  • 2 tbsp French cultured butter
  • 2 tbsp plain flour
  • 1 &1/2 cups milk
  • 1 cup Comté cheese grated
  • salt & pepper to taste

To Serve

  • 1 Australian Black Winter Truffle

Instructions
 

Whole Roasted Cauliflower

  • Preheat oven to 210C.
  • Place cauliflower on a oven tray, drizzle liberally with extra virgin olive oil and season generously with salt and pepper.
  • Roast cauliflower in the oven at a high heat, for 25-30 mins. If cauliflower smokes excessively from the oil, reduce the heat to 190C.
  • Once 30 mins has elapsed reduce heat to 190C and continue to cook for another 20-25 mins.
  • Insert a skewer or knife in the underside of the cauliflower, where it should give slightly. Adjust cooking time accordingly if required.
  • Turn off the oven and rest cauliflower inside for a minimum of 20 mins, where it will continue to cook with the residual heat.

Cheese Sauce

  • Melt butter in a saucepan over a gentle heat. Once the butter begins to caramelise, add flour and mix to form a roux, (paste).
  • Add milk at intervals and stir over a moderate heat until all the milk is incorporated, smoothing out any lumps if they form.
  • Continue to cook for another few minutes, as the sauce simmers it will thicken. Desired consistency is when the sauce coats the back of the spoon.
  • Turn off the heat and add grated Comté to the sauce, continue to stir until all the cheese is incorporated. Season sauce to taste with salt and pepper.
  • Optional - grate some fresh black truffle into the sauce, cover with cling film and set sauce aside. Heat sauce just prior to serving.

To Serve

  • Serve cauliflower whole, with a generous drizzle of warm cheese sauce at the table. Shave some fresh truffle on top of the cauliflower, just prior to serving.
