
Turkey Cranberry Scrolls
Golden, flaky puff pastry wrapped around seasoned turkey and a generous dollop of Cranberry, Port & Orange Sauce — this is the kind of easy holiday bake that disappears in minutes. They’re simple, delicious, and perfect for using up your leftovers. Swap in finely chopped roast turkey if that’s what you’ve got on hand, or stick with turkey mince for an effortless shortcut.Â

Ingredients
- 4 puff pastry sheets, thawed
- 500g turkey meat Note: Leftover roast turkey can be finely chopped and used — turkey mince works just as well if you don’t have leftovers.
- 6 tbsp approximately Tracklements Cranberry, Port & Orange Sauce (about 1.5 tbsp per sheet, adjust to taste)
- salt & pepper, to taste
- fresh thyme, leaves picked
- 1 egg, lightly beaten for egg wash
- sesame seeds, for garnish
Instructions
- Preheat your oven to 180C (fan forced) and line two trays with baking paper.
- Lay the first pastry sheet flat. Spread a thin, even layer of the turkey meat over half of the pastry (use approx 1/2 a cup,) leaving a small border at the top.Â
- Dollop some of the cranberry sauce on top of the meat, season with salt and pepper and add a few thyme leaves.
- Fold the pastry sheet in half and cut into 4 strips.
- Twist each strip into a scroll and place cut-side up on the tray, repeat with remaining pastry sheets.
- Brush each scroll with egg wash and sprinkle with sesame seeds.
- Bake for 22-25 minutes, or until the scrolls are golden and cooked through.
