San Choy Bao is a delicious parcel of spicy pork mince, wrapped in a fresh lettuce cup. Perfect for summer entertaining, with the vibrant flavours of our chilli stir fry paste and the salty umami hue of our fish sauce. We added iceberg lettuce cups, our fried shallots & some coriander to freshen things up.

Ingredients
Pork Mince Stir Fry
- 1 Iceberg Lettuce Large
- 3 tbsp SIMON JOHNSON everyday extra virgin olive oil
- 1/2 Spanish onion diced
- 1 kg Pork Mince
- 4 tbsp SIMON JOHNSON Chilli Stir Fry Paste
- 4 tbsp SIMON JOHNSON Fish Sauce
- 227 g Water Chestnuts sliced
Garnish
- SIMON JOHNSON fried shallots
- 1/2 Spanish onion sliced
- 1 bunch Fresh coriander leaves
Instructions
Pork Mince Stir Fry
- Wash iceberg lettuce in cold water & trim leaves into neat lettuce cups, using scissors (set aside in cold water until needed to prevent them from wilting).
- In a medium pan, heat the olive oil over a medium heat. Sauté the red onion & pork mince until it begins to colour.
- Add the chilli stir fry paste, along with fish sauce. Continue to cook for 5 mins.
- Add the water chestnuts and continue to cook for a further few minutes until all the mince has browned and is cooked through. Turn off heat.
To Serve
- Spoon pork mince into lettuce cup and add a few sprigs of coriander, sliced red onion & top with fried shallots to serve.
