Pizza with Artichokes and Fennel Salami

Try this fantastic Pizza with Artichokes and Fennel Salami made using only the best ingredients specially selected by Simon Johnson.




  • Pizza Dough

  • 1 kg Strong flour, 000
  • 500 ml Warm water
  • 15 g Dried yeast
  • 1 tbsp Sugar
  • Pinch of Salt
  • Simon Johnson everyday olive oil
  • Semolina, to dust the bottom of the tray
  • Pizza Toppings

  • Simon Johnson Pasta Sauce with Basil
  • Sommariva Pitted Black Olives
  • Elementi Artichokes
  • Salumi Australia Fennel Salami
  • Shaw River Buffalo Mozzarella
  • Fresh Basil, to garnish


    Pizza Dough

  1. Preheat the oven to 200C until hot
  2. Mix flour, yeast, sugar & salt in a large bowl and gradually add the warm water
  3. Knead into a firm ball, tipping the dough onto a clean bench to really work the dough
  4. Coat a clean bowl with a little olive oil, place dough into the bowl and cover with cling wrap
  5. Rest for a minimum of 20-30 mins
  6. Scatter two baking trays with semolina
  7. Turn dough out of bowl and divide into two portions
  8. Press dough evenly onto trays, keep them rustic & rectangular (if prefferred)
  9. Pizza Toppings

  10. Layer the top of pizza dough with tomato sauce with basil
  11. Scatter with black pitted olives & artichokes
  12. Add the fennel salami and gently tear the buffalo mozzarella over the top of the pizzas
  13. Bake in the oven for 20-25 mins until golden brown around the edges of the crust and cheese has begun to melt through.
  14. Garnish with torn fresh basil
