Strozzapreti is also known as “priest chokers”, due to a myth that food-loving Italian priests would eat so many they would choke. Made from high-quality Apulian durum wheat, this pasta is recognised for its high protein content and excellent gluten index, delivering a firm, elastic texture that remains perfectly ‘al dente.’ This pasta pairs well with a rich ragu, or simply with melted butter and Reggiano cheese.
