The natural rind of this pure ewe’s milk cheese is regularly wiped with olive oil to prevent mould growth during a minimum four-month maturation period in damp humidity-controlled cellars. The rind develops a burnt golden colour while the nutty texture becomes dense and flaky with a slightly sweet finish.
