Acipenser Gueldenstaedtii takes approximately 10 to 13 years to mature before producing roe. Black Pearl Oscietra Gold has a distinct olive, golden colour, its pearl size is about 2.9mm-3mm and is revered as the ultimate caviar due to its rare pigment. Its palate is creamy, silky and nutty.
