No Churn Ice Cream with Honeycomb & Scorza

Ingredients
- 600ml double cream
- 375g sweetened condensed milk
- 150g Velvet Fields Honeycomb
- 76g Majani Scorza Rum, 1 packet equals 38g
- a pinch of Tasman Sea Salt
- 150g SIMON JOHNSON Chocolate Wafers*
- 50g SIMON JOHNSON Pure Butter Wafers*
- *NOTE: Each 50g packet has 6 wafers, which will make 3 icecream sandwiches
- OPTIONAL - disposable paper cups, for icecream sandwiches
Instructions
No Churn Ice Cream
- Add the double cream and sweetened condensed milk to a large mixing bowl, whisk together using an electric mixer, or hand mix until mixture reaches a firm and smooth consistency.
- Cut the honeycomb into bite size pieces and add to the bowl, add the crumbled scorza (chocolate flakes) pieces along with a pinch of sea salt and mix together until combined.
- Optional - Freeze ice cream in a shallow container for a minimum of 2-3 hours, and serve as required.
To Make Ice Cream Sandwiches
- Spoon ice cream mixture into a disposable paper cup. Tap each cup on a bench to distribute the filling evenly. Repeat this process until all the mixture is used.
- Place paper cups on a tray to freeze for a minimum of 2-3 hours, or until mixture is firm.
To Serve
- Set wafers aside in pairs.
- Remove ice-cream from the freezer, using a pair of scissors cut through the paper to reveal a cylinder of ice cream.
- Slice a disc from each cylinder, approximately 3-4 cm wide, cut according to your preference.
- Sandwich each disc of ice-cream between 2 wafers, repeat the process for each ice cream sandwich.
- Serve immediately.
