Lucky Golden Oysters with Caviar
Ring in the Lunar New Year with a touch of luxury and these lucky golden oysters. Crispy golden oysters are topped with exquisite caviar, to make the perfect dish, symbolic of prosperity and indulgence. Make this for a celebration of flavours, as rich as the year ahead!

Ingredients
Panko Crumbed Oysters
- 1 doz shucked Pacific oysters or large Rock oysters, allow extra per person as required
- 3 whole eggs, beaten
- 2 cups panko crumbs
- 2 cups neutral oil for frying, we used sunflower
To Serve
- oyster shells, to serve
- crème fraîche, one dollop per oyster
- 30g-50g garnish of Black Pearl Oscietra or Black Pearl Oscietra Gold, one bump per oyster
- chive stems, sliced
Instructions
- Carefully remove the oysters from each shell and place into a small bowl.
- Line a tray with paper towel and place oyster shells upside down to allow liquid to drain off, set aside.
- Beat the eggs in a shallow bowl. Pour the panko crumbs onto a plate or bowl.
- Dip each oyster into the beaten egg, ensuring it’s fully coated. Roll each oyster in the panko crumbs, pressing gently to adhere the crumbs and set aside.
- Heat oil to a high heat in a small saucepan. Carefully fry the oysters in small batches for a minute, until golden brown and crispy. Remove and place on a tray lined with paper towels to drain excess oil.
To Serve
- Place oyster shells onto a serving platter, top each shell with a fried oyster.
- Add a small dollop of crème fraîche on top of each oyster, followed by a bump of caviar and a chive stem. Serve immediately.
