Honey Butter Soy Sauce Pancakes

These pancakes are inspired by the cult-favourite Golden Diner pancakes, from Chef Sam Yoo, in New York. Ours feature Lescure French Cultured Butter, Velvet Fields Australian Crimson Honey and Yamato Unfiltered Raw Soy Sauce, from Japan.

  • small non-stick pan, approximately 14cm is ideal

Ingredients
  

Pancake Batter (Yeasted)

  • 1 cup warm water (room temperature)
  • 1 tbsp dry yeast
  • 4 tbsp caster sugar (for yeast and batter)
  • 3 Kangaroo Island Free Range Eggs
  • 1 cup buttermilk
  • 1 tbsp oil
  • 2 cups self-raising flour
  • ¾ cup plain flour

Honey Butter Soy Sauce  

  • 150g Lescure Demi-Sel French Cultured Butter, plus extra to serve on top of pancakes
  • 4 tbsp Velvet Fields Crimson Forest Honey
  • 1 tbsp Yamato Soy Sauce

Instructions
 

Pancake Batter (Yeasted)

  • Preheat oven to 180C.
  • In a large bowl, whisk the warm water with yeast and 2 tbsp of sugar. Let sit for 5–10 minutes until frothy.
  • In a separate bowl, whisk eggs, 2 tbsp sugar, buttermilk, and oil until smooth. Add yeast mixture to the eggs and buttermilk.
  • Fold in both flours until just combined, the batter will have some lumps, and be thick, but pourable.
  • Cover the bowl with cling wrap. Allow batter to rest at room temperature for 25-30 minutes, until it is light and bubbly and the volume has increased.
  • Heat a non-stick pan over medium-low heat, lightly grease the pan with butter. Pour in 1 cup of batter per pancake, cook over a gentle heat until bubbles form on the surface, and the edges are just set.
  • Place pan into the oven to continue cooking through for 5 minutes, or until the middle of the pancake has firmed up and the top is just set.
  • Flip pancake onto a plate, (bottom side up) and repeat the cooking process for the remaining pancake batter.

Honey Butter Soy Sauce

  • In a small saucepan, melt the butter gently over low heat. Add honey and soy sauce, stirring until combined.
  • Remove pan from heat and use a stick blender to emulsify into a glossy, pourable sauce.

To Serve

  • Stack the warm pancakes high and drizzle generously with the honey butter soy sauce. Serve immediately, with extra sauce on the side for dipping.
  • For next level indulgence, finish with an extra pat of butter on top of the stack.
