Hearty Vegetable Soup

This hearty vegetable soup is full of flavour & nourishing ingredients. Keep some of our favourite pantry ingredients at hand to make your mealtimes easier, including these El Navarrico Butter Beans, Green Beans, Italianavera Tomatoes; Perche Ci Credo Basil Pesto and finish with a robust Extra Virgin Olive Oil, from Colonna Estate.

Ingredients
  

  • Colonna Extra Virgin Olive Oil
  • 1/2 brown onion diced
  • 1 garlic clove sliced
  • 1/2 bunch kale leaves washed and picked
  • 1 bunch fresh sage leaves
  • 400g Italianavera Organic Tomatoes
  • 325g El Navarrico Plancheta Beans
  • 660g El Navarrico Green Beans
  • 1/2 litre Aneto Vegetable Broth
  • Salt & Pepper to taste

To Serve

  • Perche Ci Credo Basil Pesto
  • Cravero Parmigiano Reggiano

Instructions
 

  • In a medium sized pot sauté the brown onion and garlic in a generous amount of extra virgin olive oil, over a gentle heat until fragrant. Add kale leaves and wilt down to break up the fibrous leaves.
  • Add chopped sage, tomatoes, beans, green beans and loosen the mixture with some stock or water, until your desired consistency is achieved.
  • Stir soup over a medium heat until it is simmering and all the vegetables have softened, (approximately 20-25 mins) season to taste with salt & pepper.

To Serve

  • Ladle soup into serving bowls and top with a generous dollop of pesto and grated Parmigiano Reggiano at the table.
