Fancy Onion Dip
This luxurious dip pairs the creamy richness of crème fraîche with the sweetness of Tracklements Onion Marmalade. The crunch of our SIMON JOHNSON Fried Shallots, and the elegant brininess of Black Pearl Australian Salmon Caviar, make this an update on an old favourite.

Ingredients
Onion Dip
- 200ml Crème Fraîche
- 1-2 Tbsp Tracklements Onion Marmalade, adjust according to taste
- 3 Tbsp SIMON JOHNSON Fried Shallots
To Serve
- chopped parsley or chives, optional
- 50g Black Pearl Australian Salmon Caviar
- 2 Tbsp SIMON JOHNSON Fried Shallots, to garnish
- 125g Brets Tartiflette Chips
Instructions
- In a medium bowl, add crème fraîche along with 1 tablespoon of onion marmalade, stir until well combined. Taste and adjust the seasoning, adding more onion marmalade if you prefer a sweeter and more intense onion flavour.
- Mix in fried shallots to add a delightful crunch and flavour to the dip.
- Transfer dip to a serving bowl or glass, sprinkle with chopped parsley or chives for a touch of colour and freshness.
- Garnish with extra fried shallots for additional crunch, along with a generous spoonful of salmon caviar prior to serving.
- Serve dip with your choice of crackers or chips.
