Join us at SIMON JOHNSON Subiaco for an exclusive charcuterie masterclass with renowned Chef Melissa Palinkas. Discover the art of charcuterie, from how it’s made to how you can best enjoy these delectable products. Melissa will guide you through the process of assembling the perfect cheese and charcuterie board, sharing her insider tips and tricks. She’ll also be preparing unique charcuterie-inspired canapés, perfect for your next gathering.
Meanwhile, Charlie from Moët Hennessy will introduce you to a selection of New World wines, offering expert advice on pairing them with your favourite charcuterie. Guests will have the opportunity to savour the delicious creations crafted by Chef Melissa.

ABOUT
Food reviewers describe Melissa Palinka’s food with words like ‘inventive’, ‘fun’, ‘smart’, ‘original’, and ‘drop-dead gorgeous’. Melissa was the head chef at The Cabin in Mt Hawthorn for 4 years, before setting up Young George, which she describes as a neighbourhood bar with a serious focus on food. In 2018 Melissa was awarded her first chef’s hat from the Good food guide AU and in 2019 won chef of the year with the Western Australian good food guide. In August 2020 Melissa embarked on a new venture with Ethos deli & dining room, a New York style deli with and eastern European twist. While she enjoys producing an innovative menu, Melissa runs a sustainable kitchen, making the best use of every part of vegetables and meats and minimising waste and plastic use.
Melissa is now a national judge for the charcuterie excellence awards held in Melbourne each year, where she sits on a panel with other judges to find Australia’s best small goods producers. Melissa has been featured in esteemed publications such as Gourmet traveller magazine, Delicious magazine where she also is a state judge for the produce awards held in Sydney each year. Several features in Qantas magazine as well as The National Hospitality Magazine. Melissa has remained on the W.A event circuit for 10 years, cooking at events such as Gourmet Escape in Margaret River, Shinju Matsuri in Broome, Karijini eco resort in the Kimberly, Truffle Kerfuffle in Manjimup with award winning chef Analiese Gregory and Taste Great Southern Albany with her also.
Melissa is currently focused on her ‘nose to tail’ Charcuterie wholesale business and being creative in her restaurants.
