Chilli Prawn Stir Fry
Welcome in the Year of the Rabbit with this quick and easy stir fry, with the familiar flavours of your favourite Asian take-away, treat yourself to a tasty night in! Ingredients
- 2-3 tbsp butter
- 1kg whole green prawns in shell
- SIMON JOHNSON Chilli Stir Fry paste
- 1/2 can Italianavera tomatoes roma or cherry, chopped
- 3 slices ginger
- 3 celery sticks chopped + extra to garnish
- 2-3 tbsp SIMON JOHNSON Fried Shallots
- steamed rice to serve
Instructions
- Heat butter in a hot pan until it sizzles. Add whole prawns along with a jar of the stir fry paste.
- Add tomatoes and sliced ginger and toss prawns through mixture, coating the shells until glossy. Cook for approx 5-6 mins.
- Reduce heat and add chopped celery to the pan, continue to cook until the prawns are opaque, firm and cooked through.
- Remove from heat and transfer the prawns to a serving dish. Sprinkle with fried shallots and a little extra chopped celery and serve with steamed rice.
