Chilli Prawn Stir Fry

Welcome in the Year of the Rabbit with this quick and easy stir fry, with the familiar flavours of your favourite Asian take-away, treat yourself to a tasty night in! The sign of Rabbit is a symbol of longevity, peace and prosperity in Chinese culture, 2023 is predicted to be a year of hope. (Tip) Seafood served whole is considered luckier & more abundant during the Lunar New Year.

Ingredients
  

  • 2-3 tbsp butter
  • 1kg whole green prawns in shell
  • SIMON JOHNSON Chilli Stir Fry paste
  • 1/2 can Italianavera tomatoes roma or cherry, chopped
  • 3 slices ginger
  • 3 celery sticks chopped + extra to garnish
  • 2-3 tbsp SIMON JOHNSON Fried Shallots
  • steamed rice to serve

Instructions
 

  • Heat butter in a hot pan until it sizzles. Add whole prawns along with a jar of the stir fry paste.
  • Add tomatoes and sliced ginger and toss prawns through mixture, coating the shells until glossy. Cook for approx 5-6 mins.
  • Reduce heat and add chopped celery to the pan, continue to cook until the prawns are opaque, firm and cooked through.
  • Remove from heat and transfer the prawns to a serving dish. Sprinkle with fried shallots and a little extra chopped celery and serve with steamed rice.
