Cheesy Comté Muffins with Tracklements Onion Marmalade

Here’s a savoury melt-and-mix muffin recipe featuring the rich, nutty flavour of Comté cheese and a sweet-savoury burst from Tracklements Onion Marmalade.

Ingredients
  

  • 125g Lescure Unsalted Butter, melted
  • 4 whole eggs
  • 1 cup buttermilk
  • 1½ cups self-raising flour
  • 2 tbsp chives, chopped
  • pinch of sea salt
  • 2 cups ComtĂ© cheese, grated
  • Tracklements Onion Marmalade, to dollop on top

Instructions
 

  • Preheat your oven to 180°C (fan-forced). Line a 12-hole muffin tin with paper cases, alternatively grease tins.
  • In a large bowl, whisk melted butter, eggs and buttermilk until combined.
  • Fold in the SR flour, chives, sea salt and grated ComtĂ©. Mix gently until just combined and the batter is light and airy.
  • Spoon the batter into the prepared muffin tin, filling each case about Âľ full.
  • Top each muffin with a generous dollop of Tracklements Onion Marmalade.
  • Bake for 20–25 minutes or until golden on top and a skewer comes out clean.
  • Transfer muffins to a wire rack, best served warm.
