
Cheesy Comté Muffins with Tracklements Onion Marmalade
Here’s a savoury melt-and-mix muffin recipe featuring the rich, nutty flavour of Comté cheese and a sweet-savoury burst from Tracklements Onion Marmalade.

- 125g Lescure Unsalted Butter, melted
- 4 whole eggs
- 1 cup buttermilk
- 1½ cups self-raising flour
- 2 tbsp chives, chopped
- pinch of sea salt
- 2 cups Comté cheese, grated
- Tracklements Onion Marmalade, to dollop on top
Instructions
- Preheat your oven to 180°C (fan-forced). Line a 12-hole muffin tin with paper cases, alternatively grease tins.
- In a large bowl, whisk melted butter, eggs and buttermilk until combined.
- Fold in the SR flour, chives, sea salt and grated Comté. Mix gently until just combined and the batter is light and airy.
- Spoon the batter into the prepared muffin tin, filling each case about Âľ full.
- Top each muffin with a generous dollop of Tracklements Onion Marmalade.
- Bake for 20–25 minutes or until golden on top and a skewer comes out clean.
- Transfer muffins to a wire rack, best served warm.
